A note on the scent
Bold, herbaceous and warmly spicy, this is the unmistakable taste of Mediterranean hillsides and village tavernas. It is very concentrated: dip a toothpick into the bottle, swirl it through olive oil, then drizzle over grilled halloumi, ripe tomatoes, souvlaki or a village salad.
Chemical profile
An essential oil is a natural mixture of dozens of compounds. These are the ones that typically dominate it; the exact composition varies from batch to batch.
