A note on the scent
Herbaceous, warm and a little peppery, it carries the scent of wild thyme on a sun-baked Mediterranean hillside. A single, well-diluted drop is a lovely way to season olive oil marinades, roasted vegetables, soups and slow-cooked stews when fresh herbs are out of season.
